8 oz feta cheese, crumbled

1 cup spinach, finely chopped (fresh or frozen, thawed and drained)

1/2 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, chopped

1 teaspoon garlic powder

1 teaspoon black pepper

1/2 teaspoon salt

8 sheets of phyllo dough

1/2 cup melted butter or olive oil, for brushing

1/2 cup panko breadcrumbs

1/4 cup honey

2 tablespoons chili flakes (adjust based on heat preference)

Zest of 1 lemon

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Filling: In a large mixing bowl, combine the crumbled feta cheese, chopped spinach, sun-dried tomatoes, basil, garlic powder, black pepper, and salt. Mix until all ingredients are evenly incorporated.

      Prepare Phyllo Dough: Lay out a sheet of phyllo dough on a clean, dry surface and brush lightly with melted butter or olive oil. Place another sheet on top and brush again. Repeat until you have layered 4 sheets.

        Fill Rolls: Place a generous tablespoon of the feta filling at the short end of the phyllo dough. Fold in the sides and roll it up tightly to create a cylinder shape. Repeat with the remaining phyllo dough and filling.

          Coat with Panko: Once all rolls are filled, brush the outer layer of each roll with butter or oil. Roll each one in panko breadcrumbs to coat evenly.

            Arrange on Baking Sheet: Place the coated rolls seam-side down on a baking sheet lined with parchment paper. Ensure they’re spaced apart for even cooking.
