8 oz thinly sliced pastrami

4 slices rye bread

4 slices Swiss cheese

1/4 cup sauerkraut, drained

1/4 cup yellow mustard

1 tablespoon olive oil

1 teaspoon smoked paprika

Freshly cracked black pepper, to taste

Prepare the Pastrami: In a skillet over medium heat, add the olive oil and sprinkle in the smoked paprika. Once hot, add the pastrami and sauté for about 2-3 minutes until warmed and slightly crispy. Season with freshly cracked black pepper.

    Toast the Bread: While the pastrami is heating, place a separate skillet over medium-low heat. Lightly oil one side of each slice of rye bread. Place two slices in the skillet, oil-side down.

      Layer the Ingredients: On each slice of bread in the skillet, layer a slice of Swiss cheese, followed by a generous portion of the warm pastrami, and a spoonful of sauerkraut. Top with another slice of Swiss cheese, and then place the remaining slices of rye bread on top, oil-side up.

        Grill the Sandwiches: Cook the sandwiches for about 3-4 minutes on each side or until the bread is golden brown and the cheese has melted. Press down gently with a spatula while grilling to ensure even melting.
