2 ripe peaches, pitted and sliced

1 cup fresh spinach

1 medium red onion, thinly sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Fresh basil for garnish (optional)

1 teaspoon dried thyme

Prep the Chicken: Season the chicken breasts with salt, pepper, and dried thyme on both sides.
