Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and diced

1/2 cup peach preserves

1/4 cup soy sauce

1 tablespoon apple cider vinegar

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh basil or parsley, for garnish

Instructions

Prepare the Marinade: In a medium bowl, combine the diced peaches, peach preserves, soy sauce, apple cider vinegar, olive oil, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Stir well until everything is fully mixed.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that it is fully coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 3 hours for more flavor.

Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 375°F (190°C).

        Cook the Chicken:

          - Grilling Method: Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 6-8 minutes on each side or until fully cooked (internal temperature should reach 165°F (75°C)). Baste with extra marinade during the last few minutes of grilling for added flavor.

            - Baking Method: Place the marinated chicken in a greased baking dish and bake for 25-30 minutes, or until cooked through. You can also baste with the leftover marinade halfway through cooking.

Create the Glaze: While the chicken cooks, pour the remaining marinade into a small saucepan. Bring to a boil over medium heat, then reduce to a simmer, stirring frequently until the sauce thickens slightly (about 5-7 minutes).

Serve the Chicken: Once the chicken is fully cooked, remove it from the grill or oven and let it rest for 5 minutes. Drizzle the peach glaze over the chicken, and garnish with fresh basil or parsley before serving.

Enjoy! Serve with a side of grilled vegetables or rice for a complete meal.
