Peach Pasta Bake

12 oz pasta (penne or rigatoni works great)

2 cups fresh peaches, diced (about 3 medium peaches)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cups baby spinach

3 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

2 tbsp olive oil

1 cup heavy cream

½ cup breadcrumbs (optional, for topping)

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Veggies: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes.

        Add Spinach & Peaches: Stir in the baby spinach and cook until wilted. Then, add the diced peaches, oregano, thyme, salt, and pepper. Cook for an additional 3-4 minutes until the peaches have softened slightly.

          Combine Mixtures: In a large bowl, combine the cooked pasta, sautéed veggies, ricotta cheese, mozzarella cheese, heavy cream, and half of the Parmesan cheese. Mix well until everything is fully incorporated.

            Transfer to Baking Dish: Transfer the mixture to a greased 9x13 inch baking dish. Spread evenly and top with remaining Parmesan cheese and breadcrumbs for a crispy topping.

              Bake: Place the baking dish in the oven and bake for about 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
