Ingredients

For the Grilled Chicken:

2 large boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For Assembly:

8 small corn or flour tortillas

Crumbled queso fresco or feta cheese (optional)

Avocado slices (optional)

Lime wedges, for serving

Instructions

Marinate the Chicken: In a mixing bowl, combine olive oil, smoked paprika, garlic powder, ground cumin, lime juice, salt, and pepper. Add the chicken breasts, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Prepare the Peach Salsa: In a separate bowl, mix together the diced peaches, red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Taste and adjust seasoning if necessary. Set aside to allow flavors to mingle.

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips.

Warm the Tortillas: While the chicken is resting, warm the tortillas on the grill for about 30 seconds on each side, or until pliable. Alternatively, you can heat them in a dry skillet over medium heat.

Assemble the Tacos: To each tortilla, add a generous amount of grilled chicken strips, followed by a heaping spoonful of peach salsa. If desired, top with crumbled queso fresco or feta, and avocado slices.

Serve: Arrange the tacos on a platter with lime wedges on the side for extra zest. Enjoy your delicious Peach Salsa Grilled Chicken Tacos with family and friends!
