2 large ripe bananas, mashed

1/2 cup creamy peanut butter (or nut butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (or dairy-free chocolate chips)

1/4 cup chopped nuts (walnuts, almonds, or pecans are great)

Optional: 1/4 cup shredded coconut

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, baking powder, cinnamon, and salt. Stir until evenly distributed.

        Combine Both Mixtures: Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix. You want everything to be well incorporated without overly mashing the bananas.

          Add Chocolate and Nuts: Gently fold in the dark chocolate chips and chopped nuts (and shredded coconut, if using) until evenly distributed throughout the mixture.

            Transfer to Pan: Pour the mixture into the prepared baking pan, spreading it evenly into all corners. Use the back of a spoon or a spatula to smooth the top if necessary.

              Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean.

                Cool and Cut: Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper overhang. Let them cool completely on a wire rack before slicing into bars.

                  Store: Store leftover bars in an airtight container at room temperature for up to one week or in the fridge for up to two weeks.
