Pear & Cranberry Streusel Muffins

Ingredients
  

2 ripe pears, peeled, cored, and diced

1 cup fresh or frozen cranberries

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

1 large egg

½ cup whole milk

½ cup unsalted butter, melted and slightly cooled

1 tsp vanilla extract

Streusel Topping:

½ cup all-purpose flour

¼ cup brown sugar, packed

¼ cup cold unsalted butter, cubed

½ tsp ground cinnamon

½ cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with non-stick spray.

    Prepare the streusel topping: In a medium bowl, combine the ½ cup of flour, ¼ cup of brown sugar, ½ tsp of cinnamon, and the cold cubed butter. Use a pastry cutter or your fingers to mix until crumbly. If using, fold in the chopped walnuts or pecans. Set aside.

      Mix dry ingredients: In a large mixing bowl, whisk together the 1 ½ cups of flour, granulated sugar, ½ cup of brown sugar, baking soda, baking powder, salt, ground cinnamon, and nutmeg until well blended.

        Combine wet ingredients: In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.

          Combine wet and dry ingredients: Gradually add the wet ingredients to the dry mixture, stirring gently until just combined (do not overmix). Gently fold in the diced pears and cranberries.

            Scoop the batter: Using a large spoon or an ice cream scoop, divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Add the streusel topping: Generously sprinkle the streusel topping over each muffin.

                Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Cool and serve: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy these delightful muffins warm or at room temperature!
