1 cup pecans, toasted and chopped

1 cup graham cracker crumbs

1/2 cup powdered sugar

1/2 cup light corn syrup

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup semi-sweet chocolate chips (for coating)

Prepare the Pecans: Preheat your oven to 350°F (175°C). Spread pecans on a baking sheet and toast for about 8-10 minutes, or until fragrant. Allow to cool and then chop finely.

    Mix Ingredients: In a large mixing bowl, combine the toasted chopped pecans, graham cracker crumbs, powdered sugar, melted butter, corn syrup, vanilla extract, ground cinnamon, and salt. Mix until all the ingredients are well combined and form a sticky dough-like mixture.

      Form the Balls: Using your hands, scoop out tablespoon-sized portions of the mixture. Roll them into balls and place them on a parchment-lined baking sheet. You should get about 20-24 balls.

        Chill: Cover the baking sheet with plastic wrap and refrigerate the balls for at least 1 hour, or until firm.

          Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each interval until the chocolate is completely smooth and melted.

            Coat the Balls: Dip each chilled pecan ball into the melted chocolate, ensuring they are fully coated. Use a fork to lift them out, allowing excess chocolate to drip off. Place the coated balls back on the parchment-lined baking sheet.
