Ingredients

1 cup pecans, chopped

1 box (15.25 oz) yellow cake mix

1 cup light brown sugar, packed

1/2 cup unsalted butter, melted

1 can (15 oz) sweet potato puree (or pumpkin puree)

1/2 cup evaporated milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup water

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

Spread the Base: In the prepared baking dish, evenly spread the sweet potato or pumpkin puree as the bottom layer.

Combine the Liquids: In a mixing bowl, whisk together the evaporated milk, melted butter, vanilla extract, ground cinnamon, ground nutmeg, and salt until well combined.

Layer the Cake Mix: Sprinkle the yellow cake mix evenly over the pumpkin or sweet potato layer. Do not stir – it’s meant to be layered!

Drizzle the Liquid Mixture: Pour the milk and butter mixture over the yellow cake mix, allowing it to soak in but still keeping the layers intact.

Add Pecan Topping: Sprinkle the chopped pecans evenly over the top of the whole mixture.

Prepare for Baking: Carefully pour one cup of water around the edges of the baking dish.

Bake: Place the dish in the preheated oven and bake for about 45-55 minutes, or until the top is golden brown and the center is set.

Cool and Serve: Allow the dump cake to cool for 10-15 minutes before serving. This dish is best served warm, optionally topped with whipped cream or vanilla ice cream.
