Pepper Steak in a Crock Pot

1.5 lbs beef flank steak, sliced against the grain

2 tablespoons olive oil

1 large onion, sliced

2 bell peppers (red and green), sliced

4 cloves garlic, minced

1 cup beef broth

1 cup soy sauce (or tamari for gluten-free)

2 tablespoons brown sugar

1 tablespoon cornstarch

1 teaspoon black pepper

1 teaspoon ground ginger

1/2 teaspoon red pepper flakes (optional for heat)

2 green onions, chopped (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Sear the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced flank steak. Sear for about 2-3 minutes on each side until browned. Transfer to the crock pot.

    Sauté the Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for 3-4 minutes until they begin to soften. Add the minced garlic and cook for an additional minute. Transfer the vegetables to the crock pot over the beef.

      Combine Sauce Ingredients: In a separate bowl, whisk together the beef broth, soy sauce, brown sugar, cornstarch, black pepper, ground ginger, and red pepper flakes. Pour this mixture over the beef and vegetables in the crock pot.

        Cook: Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the flavors meld together.

          Thicken the Sauce (optional): If you prefer a thicker sauce, stir in an additional tablespoon of cornstarch mixed with water during the last 30 minutes of cooking.
