Ingredients

1 ½ cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 ¼ cups buttermilk (or milk with 1 tablespoon vinegar)

1 large egg

3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

Extra butter or oil for the skillet

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Prepare Wet Ingredients: In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; some lumps are okay.

Add Chocolate Chips: Gently fold the chocolate chips into the batter, ensuring an even distribution.

Heat the Skillet: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to the pan and let it coat the surface.

Cook Pancakes: For each pancake, pour about ¼ cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, approximately 2-3 minutes.

Flip and Finish: Carefully flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through. Remove from the pan and keep warm while you repeat with the remaining batter.

Serve: Stack the pancakes high and serve with a drizzle of maple syrup, fresh fruits, or additional chocolate chips. Enjoy your decadent breakfast!
