4 large russet potatoes, peeled and diced

1 large onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups heavy cream (or coconut milk for a lighter option)

2 tablespoons unsalted butter (or olive oil)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Shredded cheddar cheese (for serving, optional)

Crispy bacon bits (for serving, optional)

Instructions
 

Sauté Aromatics: In a large stockpot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook Potatoes: Add the diced potatoes, vegetable broth, thyme, smoked paprika, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat to a simmer and cover the pot. Let it simmer for about 20-25 minutes, or until the potatoes are fork-tender.

      Blend the Soup: Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender (make sure the steam can escape!).

        Stir in Cream: Return the pureed soup to the heat and stir in the heavy cream or coconut milk. Allow it to warm through on low heat for about 5-10 minutes. Taste and adjust seasoning as necessary.

          Serve: Ladle the soup into bowls and top with chopped fresh chives. For an extra indulgent touch, sprinkle with shredded cheddar cheese and crispy bacon bits if desired.
