Ingredients

½ cup unsalted butter, softened

¾ cup granulated sugar

¼ cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon cream of tartar

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Prepare the Dough: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy. This should take about 2-3 minutes.

Add Wet Ingredients: Add the egg and vanilla extract to the butter mixture and continue to mix until well combined.

Combine Dry Ingredients: In another bowl, whisk together the flour, cream of tartar, baking soda, and salt.

Mix Together: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix; the dough should be soft and a little sticky.

Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes. This helps the cookies maintain their shape while baking.

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Make the Coating: In a small bowl, mix together 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon.

Shape the Cookies: Once the dough is chilled, use a cookie scoop or tablespoon to portion out the dough. Roll each portion into a ball and then roll it in the cinnamon-sugar mixture to coat.

Bake the Cookies: Place the coated dough balls about 2 inches apart on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden but the centers are still soft.

Cool & Enjoy: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your perfectly chewy snickerdoodle cookies!
