1 whole chicken (about 4-5 lbs)

2 tablespoons olive oil

1 tablespoon unsalted butter, softened

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 lemon, halved

4 sprigs fresh rosemary

4 sprigs fresh thyme

1 cup chicken broth

4 carrots, peeled and cut into large chunks

2 onions, quartered

1 head of garlic, halved horizontally

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: Remove the chicken from the refrigerator and allow it to sit at room temperature for about 30 minutes. This helps with even cooking.

      Seasoning Mix: In a small bowl, combine olive oil, softened butter, salt, pepper, smoked paprika, garlic powder, and onion powder. Mix until it forms a paste.

        Apply the Seasoning: Gently loosen the skin of the chicken over the breast and thighs using your fingers. Rub half of the seasoning mix directly onto the meat under the skin, and the other half on the outside of the chicken.

          Stuff the Chicken: Inside the cavity of the chicken, place the lemon halves, fresh rosemary, and thyme. This will infuse the chicken with flavor as it roasts.

            Arrange the Vegetables: In a large roasting pan, place the carrot chunks, quartered onions, and halved garlic. Pour chicken broth over the vegetables. This will create a flavorful base for the chicken to roast on and keep it moist.

              Position the Chicken: Place the seasoned chicken, breast side up, on top of the bed of vegetables in the roasting pan.

                Roasting: Roast the chicken in the preheated oven for about 1 hour and 20 minutes, or until the juices run clear when pierced between the leg and the body (the internal temperature should reach 165°F or 74°C). Baste the chicken with the pan juices halfway through cooking.

                  Resting: Once done, remove the chicken from the oven and let it rest for at least 15 minutes. This allows the juices to redistribute for a more succulent bird.
