Ingredients

1 pound fresh sea scallops

2 tablespoons unsalted butter

1 tablespoon olive oil

Sea salt, to taste

Freshly ground black pepper, to taste

1 clove garlic, minced

1 teaspoon fresh lemon juice

1 tablespoon finely chopped fresh parsley

Lemon wedges, for garnish

Instructions

Prepare the Scallops: Pat the scallops dry with paper towels to remove any excess moisture, ensuring a perfect sear. Season both sides with sea salt and freshly ground black pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Allow it to heat until it's shimmering but not smoking.

Sear the Scallops: Carefully place the scallops in the hot skillet, making sure they are not touching each other. Sear without moving them for about 2-3 minutes until they develop a beautiful golden crust.

Flip and Add Butter: Turn the scallops over gently with tongs. Add the unsalted butter to the skillet along with the minced garlic. As the butter melts, spoon it over the scallops continuously to baste them. Cook for an additional 2-3 minutes until the scallops are opaque in the center and have a nice crust.

Finish with Flavor: Remove the pan from the heat and add the fresh lemon juice. Sprinkle with the chopped parsley for a touch of color and freshness.

Serve: Plate the scallops immediately, drizzling any remaining buttery sauce from the pan over them. Garnish with lemon wedges and additional parsley if desired.
