Pesto Pasta with Roasted Tomatoes

12 oz spaghetti or your choice of pasta

2 cups cherry tomatoes, halved

3 tbsp olive oil, divided

Salt and pepper to taste

1 ½ cups fresh basil leaves

½ cup grated Parmesan cheese (plus more for serving)

1/3 cup pine nuts (or walnuts)

2 garlic cloves

Juice of 1 lemon

1/4 cup pasta water (reserved from cooked pasta)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer and roast in the preheated oven for about 15-20 minutes, or until they're blistered and caramelized.

      Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining the spaghetti.

        Make the Pesto: In a food processor, combine the fresh basil leaves, Parmesan cheese, pine nuts, garlic cloves, lemon juice, and the remaining 2 tablespoons of olive oil. Blend until you achieve a smooth paste. If it’s too thick, add a little bit of the reserved pasta water to reach your desired consistency. Season to taste with salt and pepper.

          Combine and Serve: In a large mixing bowl, combine the cooked pasta with the pesto sauce and reserved pasta water. Toss to combine until the pasta is evenly coated. Then gently fold in the roasted tomatoes.

            Garnish and Enjoy: Serve the pesto pasta warm, garnished with extra Parmesan cheese and a drizzle of olive oil if desired.
