Ingredients
  

1 box (12 oz) frozen pierogi (potato and cheese or your favorite filling)

1 lb ground beef or sausage (optional for a meaty version)

1 large onion, diced

3 cloves garlic, minced

2 cups shredded cheddar cheese

1 cup sour cream

1 cup cream of mushroom soup (or homemade equivalent)

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup vegetable or chicken broth

Chopped green onions or parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat (if using): In a large skillet over medium heat, add a drizzle of oil and cook the diced onion until soft, about 5 minutes. Add the minced garlic and sauté for an additional minute. If you’re using meat, add ground beef or sausage now and cook until browned, draining any excess fat.

      Prepare the Casserole Base: In a large mixing bowl, combine sour cream, cream of mushroom soup, paprika, salt, pepper, and broth. Mix well until smooth.

        Layer the Casserole: In a greased 9x13-inch casserole dish, spread a layer of frozen pierogi evenly at the bottom. Next, layer half of the meat mixture (if using) evenly over the pierogi, followed by half of the creamy sauce. Sprinkle 1 cup of shredded cheddar cheese on top.

          Repeat the Layers: Add another layer of frozen pierogi, the remaining meat mixture, the rest of the creamy sauce, and top with the remaining cheddar cheese.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, let it cool for 5-10 minutes. Garnish with chopped green onions or parsley before serving.
