Pineapple Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup cooked chicken breast, chopped (can use rotisserie chicken)

1 cup fresh pineapple, diced (or canned, drained)

1/2 cup peas and carrots (fresh or frozen)

1/4 cup green onions, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 tablespoons vegetable oil

2 large eggs, lightly beaten

Salt and pepper to taste

Lime wedges and extra green onions for garnish

Prepare Ingredients: Make sure all ingredients are prepped before you begin cooking. This ensures a smooth and efficient cooking process.

    Heat Up the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Sauté Aromatics: Add the minced garlic to the heated oil and sauté for about 30 seconds until fragrant, making sure not to burn it.

        Cook Eggs: Push the garlic to one side of the pan and pour the beaten eggs into the other side. Scramble until just cooked, then mix the eggs with the garlic.

          Add Chicken and Vegetables: Stir in the chopped chicken, peas, and carrots. Cook for around 2-3 minutes until the vegetables are tender and the chicken is heated through.

            Incorporate Rice: Add the cooked jasmine rice into the skillet, breaking up any clumps. Stir well to mix all the ingredients thoroughly.

              Flavor It Up: Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir to combine and evenly coat the rice with sauces. Adjust seasoning with salt and pepper to taste.

                Add Pineapple: Gently fold in the diced pineapple and half of the chopped green onions, cooking for another 2-3 minutes until the pineapple is warmed through and slightly caramelized.

                  Serve: Remove from heat, garnish with the remaining green onions and serve with lime wedges on the side for an extra zesty kick.
