1 cup coconut milk

1 cup heavy cream

1/2 cup sugar

2 teaspoons vanilla extract

2 teaspoons gelatin powder

3 tablespoons cold water

1 cup fresh pineapple, diced (for topping)

1 tablespoon lime juice (for topping)

Fresh mint leaves (for garnish)

Instructions
 

Bloom the Gelatin: In a small bowl, combine the gelatin powder with cold water and let it sit for about 5-10 minutes until it becomes gelatinous.

    Heat the Cream Mixture: In a medium saucepan, combine coconut milk, heavy cream, and sugar. Heat the mixture over medium heat until it’s just simmering, ensuring the sugar dissolves completely. Stir frequently.

      Add Vanilla and Gelatin: Once the mixture has reached a simmer, remove it from heat. Stir in the vanilla extract and then add the bloomed gelatin, whisking until fully dissolved.

        Pour into Molds: Pour the panna cotta mixture evenly into serving glasses or molds. Let them cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours or until set.

          Prepare Pineapple Topping: While the panna cotta sets, mix the diced pineapple with lime juice in a bowl. Allow it to marinate in the refrigerator for 30 minutes to enhance the flavors.

            Serve: Once the panna cotta has set, remove it from the refrigerator. If using molds, gently run a knife around the edges and invert them onto serving plates. Top each panna cotta with the marinated pineapple.

              Garnish: Finish off each serving with a sprig of fresh mint for an added touch of color and flavor.
