2 cups cooked jasmine rice (preferably day-old)

1 cup fresh pineapple, diced

1/2 cup green peas (fresh or frozen)

1/2 cup carrots, diced

1/4 cup red bell pepper, diced

1/4 cup green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (or vegetarian alternative)

1 tablespoon sesame oil

2 eggs, lightly beaten

1/4 cup cashews, toasted (optional)

Fresh cilantro, for garnish

Salt and pepper, to taste

Prep the Ingredients: Start by ensuring all your ingredients are prepped and ready to go, as the cooking process will be quick.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.

      Cook the Eggs: Pour the beaten eggs into the skillet. Stir gently until the eggs are fully cooked. Remove and set aside.

        Sauté Vegetables: In the same skillet, add another tablespoon of sesame oil. Sauté the garlic until fragrant, about 30 seconds. Then, add the diced carrots, bell pepper, and green peas. Cook for 2-3 minutes until they are just tender.

          Add Pineapple: Toss in the diced pineapple and sauté for an additional 2-3 minutes until the pineapple is slightly caramelized.

            Combine Rice: Add the cooked jasmine rice to the skillet. Pour in the soy sauce and oyster sauce, mixing everything well. Fry the rice for about 5 minutes, making sure it’s heated through and well combined with the other ingredients.

              Incorporate Egg & Green Onions: Stir in the cooked eggs and chopped green onions. Season with salt and pepper to taste. If you’re using cashews, add them now for a nice crunch.
