Ingredients

1 cup fresh pineapple, finely diced

1 medium jalapeño, seeded and finely chopped (adjust for spice preference)

1/4 red onion, finely diced

1/2 red bell pepper, finely diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (optional for sweetness)

Salt to taste

1/4 teaspoon ground black pepper

Instructions

Prepare the Pineapple: Start by choosing a ripe pineapple. Cut off the top and bottom, then carefully slice off the outer skin. Remove the core and chop the fruit into small, even cubes. Measure out 1 cup and place it in a mixing bowl.

Chop the Vegetables: Finely chop the jalapeño, red onion, and red bell pepper. Make sure to wear gloves when handling jalapeños to avoid skin irritation. Add these vegetables to the bowl with the pineapple.

Add Cilantro and Lime Juice: Next, chop the fresh cilantro and add it to the mixing bowl. Squeeze the juice of 1 lime over the mixture, making sure to catch any seeds.

Enhance the Flavor: If you prefer a touch of sweetness, drizzle in 1 tablespoon of honey. Season with salt and ground black pepper to taste.

Mix It Up: Gently fold all the ingredients together with a spatula or spoon until everything is well combined.

Chill: Cover the salsa with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.

Serve: Once chilled, give the salsa a quick stir, taste, and adjust seasoning if necessary. Serve with tortilla chips, tacos, or grilled meats for a refreshing kick!
