1 ½ cups crushed pineapple, drained

1 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon salt

1 ½ tablespoons unsalted butter, cubed

1 pre-made pie crust (9-inch)

1 egg (for egg wash)

Shredded coconut (optional, for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a medium saucepan, combine the drained crushed pineapple, granulated sugar, cornstarch, lemon juice, vanilla extract, ground cinnamon, and salt. Stir well and cook over medium heat until the mixture begins to bubble and thicken, about 5-7 minutes.

      Remove the saucepan from heat and stir in the cubed butter until melted. Let the pineapple mixture cool slightly.

        Prepare the pie crust: Place your pre-made pie crust into a 9-inch pie dish, crimping the edges as desired.

          Pour the cooled pineapple filling into the pie crust, spreading it evenly.

            Cover and Seal: If desired, you can place another crust on top (making an upper crust pie), cutting slits for steam to escape, or leave it open-faced. If using a top crust, brush the crust lightly with beaten egg to create a shiny glaze.

              Bake the pie in the preheated oven for 20-25 minutes or until the crust is golden brown.

                Remove from the oven and let the pie cool on a wire rack for at least 30 minutes before slicing.

                  Serve warm or at room temperature, optionally garnished with shredded coconut.
