1 lb shrimp, peeled and deveined

2 cups fresh pineapple chunks (or canned, drained)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, thinly sliced

2 cups broccoli florets

3 cloves garlic, minced

1 inch ginger, minced

1/4 cup teriyaki sauce

2 tablespoons soy sauce (low sodium)

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Prep the Shrimp: In a bowl, toss the shrimp with 1 tablespoon of teriyaki sauce and let marinate for about 10 minutes while you prepare the other ingredients.

    Sauté the Vegetables: Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once hot, add the sliced red and green bell peppers along with the broccoli and red onion. Stir-fry for about 4-5 minutes until the veggies are tender-crisp. Remove them from the skillet and set aside.
