4 chicken quarters (legs and thighs)

1/4 cup olive oil

6 cloves garlic, minced

1 tablespoon cumin powder

1 tablespoon smoked paprika

1 tablespoon oregano (dried)

1 teaspoon ground black pepper

1 teaspoon salt

1 teaspoon cayenne pepper (adjust to taste)

Juice of 2 limes

Zest of 1 lime

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the olive oil, minced garlic, cumin, smoked paprika, oregano, black pepper, salt, cayenne pepper, lime juice, and lime zest. Whisk together until well blended.

    Add Chicken: Place the chicken quarters into the marinade. Use your hands to rub the mixture thoroughly over the chicken, ensuring each piece is coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.

      Preheat the Oven: When ready to cook, preheat your oven to 425°F (220°C).

        Prepare for Baking: Remove the chicken from the marinade and let it come to room temperature for about 15-20 minutes. Arrange the chicken quarters skin side up on a baking sheet lined with parchment paper or in a roasting pan.

          Bake the Chicken: Roast the chicken in the preheated oven for about 35-45 minutes, or until the skin is crispy and a meat thermometer reads 165°F (74°C) when inserted into the thickest part of the thigh. If desired, broil on high for an additional 2-3 minutes to achieve an extra crispy skin.

            Rest and Garnish: Once cooked, remove the chicken from the oven and let it rest for 10 minutes. Garnish with freshly chopped cilantro and serve with lime wedges on the side.
