Potato and Sausage Chowder

1 lb (450 g) smoked sausage, sliced

4 medium russet potatoes, peeled and diced

1 large onion, chopped

3 cloves garlic, minced

4 cups (1 L) low-sodium chicken broth

2 cups (480 mL) heavy cream

1 cup (240 mL) whole milk

2 cups (120 g) frozen corn

2 tsp dried thyme

1 tsp smoked paprika

Salt and black pepper, to taste

2 tbsp olive oil

Fresh parsley or chives, chopped for garnish

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook for 5-7 minutes until browned and slightly crispy. Remove the sausage from the pot and set aside.

    Cook the Aromatics: In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

      Add the Potatoes: Stir in the diced potatoes, and cook for an additional 2-3 minutes, allowing them to slightly soften.

        Combine Broth and Herbs: Pour in the chicken broth and add the thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 15-20 minutes, or until the potatoes are tender.

          Add Cream and Corn: Once the potatoes are tender, stir in the heavy cream and whole milk. Add the frozen corn and return the sausage to the pot. Let the chowder simmer for another 5-10 minutes until heated through and flavors meld.
