Ingredients

2 cups all-purpose flour

2 cups granulated sugar

1 cup buttermilk

1/2 cup vegetable oil

1 cup shredded coconut

1 cup chopped pecans or walnuts

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 can (8 oz) crushed pineapple, well-drained

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan for easy removal.

Mix Wet Ingredients: In a large mixing bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, sift together the flour, sugar, baking powder, baking soda, and salt.

Mix Together: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Add the Goodies: Fold in the shredded coconut, chopped nuts, and crushed pineapple into the batter, making sure they are evenly distributed.

Pour and Bake: Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Cooling Time: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Frosting (Optional): For an extra touch, top with a cream cheese frosting or dust with powdered sugar before serving.

Serve and Enjoy: Slice into squares and serve. This cake tastes even better the next day as the flavors meld together.
