Ingredients

1 cup egg whites (approximately 8 large eggs)

1/2 cup shredded low-fat cheese (cheddar or mozzarella)

1/2 cup chopped spinach (fresh or frozen, thawed and drained)

1/4 cup diced bell peppers (any color)

1/4 cup diced onions

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Optional toppings: chopped fresh herbs (like chives or parsley), hot sauce, or salsa

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by lightly greasing it with cooking spray or using silicone muffin liners.

Prepare the Mixture: In a large mixing bowl, combine the egg whites, shredded cheese, chopped spinach, diced bell peppers, diced onions, garlic powder, onion powder, salt, and pepper. Stir until all ingredients are well incorporated.

Fill the Muffin Tin: Pour the egg white mixture evenly into the prepared muffin tin, filling each cup about ¾ full. This will allow room for them to rise without spilling over.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg whites are set and the tops are slightly golden.

Cool and Serve: Once done, remove from the oven and let the egg bites cool in the pan for a few minutes. Carefully pop them out and serve warm. For extra flavor, top with your favorite herbs, hot sauce, or salsa if desired.

Store Leftovers: If you have leftovers, let them cool completely before storing them in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for a quick and healthy snack or breakfast option.
