Ingredients

Gnocchi:

1 lb (450g) store-bought gnocchi (or homemade, if preferred)

Pumpkin Alfredo Sauce:

1 cup pumpkin puree (unsweetened)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon dried sage (or 1 tablespoon fresh sage, chopped)

1/2 teaspoon nutmeg

Salt and black pepper to taste

To Serve:

Extra grated Parmesan cheese

Fresh sage leaves for garnish (optional)

Instructions

Cook the Gnocchi:

    - Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.

      Make the Pumpkin Alfredo Sauce:

        - In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

          - Stir in the pumpkin puree and continue to cook for about 2-3 minutes, allowing the flavors to meld.

            - Pour in the heavy cream and mix until the sauce is smooth.

              - Gradually whisk in the Parmesan cheese, continuing to stir until the cheese has melted and the sauce is creamy.

                Season the Sauce:

                  - Add the dried sage, nutmeg, salt, and black pepper to taste. Adjust seasoning as desired.

                    Combine Gnocchi and Sauce:

                      - Add the cooked gnocchi directly to the skillet with the Pumpkin Alfredo sauce. Toss gently to coat the gnocchi evenly in the sauce. Cook together for an additional 2-3 minutes, allowing the gnocchi to soak up the flavors.

                        Serve:

                          - Plate the Pumpkin Alfredo Gnocchi and sprinkle with extra grated Parmesan cheese. Garnish with fresh sage leaves if desired. Serve immediately.
