1 ¾ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon ground cinnamon

½ teaspoon nutmeg

¼ teaspoon ground ginger

¼ teaspoon cloves

½ teaspoon salt

1 cup canned pumpkin puree

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with a hand mixer until smooth and creamy. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, spices (cinnamon, nutmeg, ginger, and cloves), and salt until well-combined.

        Mix Wet Ingredients: In another bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk together until smooth.

          Combine Wet and Dry Mixtures: Gradually add the pumpkin mixture to the dry ingredients. Stir gently until just combined, being careful not to overmix.

            Fill the Muffin Cups: Scoop about 2 tablespoons of the pumpkin batter into each muffin cup. Make a small indentation in the center of each and add approximately 1 tablespoon of the cream cheese filling on top. Cover the cream cheese with another tablespoon of the pumpkin batter.

              Bake the Muffins: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
