1 cup rolled oats

1/2 cup canned pumpkin puree

1/4 cup honey or maple syrup

1/4 cup almond butter (or any nut butter of your choice)

1/2 tsp vanilla extract

1 tsp pumpkin pie spice (or a blend of cinnamon, nutmeg, and ginger)

1/4 tsp salt

1/4 cup chocolate chips (optional)

1/4 cup chopped nuts or seeds (like walnuts or pumpkin seeds) (optional)

Shredded coconut (for rolling, optional)

Instructions
 

Combine Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin puree, honey or maple syrup, almond butter, and vanilla extract. Mix until well combined.

    Add Spices: Sprinkle in the pumpkin pie spice and salt, and stir until everything is evenly incorporated. If you're adding chocolate chips and/or nuts/seeds, fold them in at this stage.

      Chill the Mixture: Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for about 30 minutes. Chilling helps the mixture firm up, making it easier to form into balls.
