1 cup rolled oats

1 cup almond milk (or any milk of choice)

1/2 cup pure pumpkin puree

1/4 cup Greek yogurt (or dairy-free yogurt)

2 tablespoons maple syrup (or honey)

1 teaspoon pumpkin pie spice

1/2 teaspoon vanilla extract

A pinch of salt

Instructions
 

In a medium bowl, combine the rolled oats, almond milk, and pure pumpkin puree. Mix well until the pumpkin is evenly incorporated.

    Add the Greek yogurt to the mixture and stir until smooth.

      Pour in the maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt. Stir everything together until well combined.

        Divide the mixture into two glass jars or airtight containers.

          Seal the jars or containers and place them in the refrigerator for at least 4 hours, preferably overnight. This allows the oats to absorb the liquid and flavors.

            In the morning, give the oats a good stir. If you prefer a thinner consistency, add a dash more milk.
