8 slices of white or whole wheat bread

1 cup pumpkin puree (not pumpkin pie filling)

2 large eggs

1/4 cup milk (or almond milk)

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 cup brown sugar

1/4 cup granulated sugar (for coating)

1/4 cup unsalted butter (for cooking)

Maple syrup (for serving)

Instructions
 

Prepare the Filling: In a medium bowl, combine the pumpkin puree, 1 tsp cinnamon, nutmeg, ginger, and brown sugar. Mix well until all ingredients are thoroughly combined.

    Flatten the Bread: Use a rolling pin to flatten each slice of bread into a thin sheet. This will make it easier to roll them up later.

      Add the Filling: Place approximately 2 tablespoons of the pumpkin mixture in the center of each flattened slice. Roll the bread up tightly starting from one side, sealing the filling inside.

        Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and vanilla extract until well blended.

          Coat the Roll-Ups: In another shallow dish, mix the granulated sugar and the remaining 1 tsp of cinnamon. Dip each rolled slice into the egg mixture, allowing the excess to drip off. Then roll each one in the cinnamon sugar mixture until coated.

            Cook the Roll-Ups: Heat a large skillet or griddle over medium heat and melt the butter. Once hot, add the roll-ups, seam side down, and cook for about 2-3 minutes on each side, or until golden brown and crispy.

              Serve: Remove the roll-ups from the skillet and drizzle with maple syrup. For an extra touch, sprinkle with powdered sugar or additional cinnamon sugar before serving.
