Ingredients

1 cup pumpkin puree (canned or fresh)

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, cloves, and ginger)

2 cups white chocolate chips

2 tablespoons unsweetened cocoa powder (for dusting)

Pinch of sea salt

Optional: chopped pecans or graham cracker crumbs for coating

Instructions

Mix the Base:

In a large mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, pumpkin pie spice, and a pinch of sea salt. Use a hand mixer or stand mixer on low speed until the mixture is smooth and fully incorporated.

      Chill the Mixture:

Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour, or until it is firm enough to scoop.

          Shape the Truffles:

Once chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter) from the chilled mixture. Place the balls onto a parchment-lined baking sheet.

              Melt the Chocolate:

In a microwave-safe bowl, melt the white chocolate chips in the microwave in 30-second increments, stirring in between until fully melted and smooth.

                  Coat the Truffles:

Dip each pumpkin truffle into the melted white chocolate, using a fork to ensure even coating. Let any excess chocolate drip off before placing them back onto the parchment-lined baking sheet.

                      Add a Finishing Touch:

While the chocolate is still wet, you can either dust the truffles with cocoa powder, or roll them in chopped pecans or graham cracker crumbs for added texture.

                          Chill Again:

Once all truffles are coated, refrigerate for another 30 minutes until the chocolate is set.

                              Serve and Enjoy:

Present your pumpkin spice truffles on a festive platter. They make perfect treats for autumn gatherings or as delightful gifts!
