Ingredients

1 medium spaghetti squash (about 3-4 pounds)

1 tablespoon olive oil

2 cloves garlic, minced

1 cup unsweetened almond milk (or any plant-based milk)

1/2 cup nutritional yeast

1 tablespoon lemon juice

1 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

Fresh parsley or basil for garnish

Optional: 1 cup steamed broccoli or peas for added nutrition

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Squash: Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil and season with salt and pepper. Place the squash cut side down on a baking sheet and roast for 30-40 minutes, until tender when pierced with a fork.

Make the Alfredo Sauce: While the squash bakes, heat a small saucepan over medium heat. Add a touch of olive oil and sauté the minced garlic until fragrant, about 1 minute.

Blend the Sauce: In a blender or food processor, combine the sautéed garlic, almond milk, nutritional yeast, lemon juice, onion powder, salt, black pepper, and nutmeg. Blend until smooth and creamy. Adjust seasoning if necessary.

Combine Squash and Sauce: Once the spaghetti squash is ready, remove it from the oven and let it cool for a few minutes. Using a fork, scrape the inside of the squash to create spaghetti-like strands. In a large bowl, gently toss the spaghetti squash with the creamy Alfredo sauce until thoroughly coated.

Add Extras (Optional): If you’re using steamed broccoli or peas, fold them into the mixture for added color and nutrition.

Serve: Plate the spaghetti squash Alfredo, garnishing with fresh parsley or basil. Enjoy your Quick and Healthy Spaghetti Squash Alfredo!
