Quick Chicken Fried Rice

2 cups cooked jasmine rice (preferably chilled)

2 tablespoons vegetable oil

1 cup chicken breast, diced

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

2 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper, to taste

Optional: Fresh cilantro or sesame seeds for garnish

Instructions
 

Prepare the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes until the chicken is thoroughly cooked and golden brown. Remove the chicken from the skillet and set aside.

    Scramble the Eggs: In the same skillet, add the beaten eggs and scramble them until fully cooked. Push the eggs to the side of the skillet.

      Cook the Vegetables: Add the remaining tablespoon of vegetable oil and toss in the minced garlic and mixed vegetables. Sauté for about 2-3 minutes until the vegetables are tender.

        Combine Ingredients: Add the cooked jasmine rice to the skillet along with the cooked chicken, scrambled eggs, and chopped green onions. Pour the soy sauce and sesame oil over the mixture. Stir everything together, ensuring the rice is heated through and well combined (about 3-4 minutes).

          Check for Flavor: Taste the fried rice and adjust the seasoning with more salt, pepper, or soy sauce if desired.
