1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

3 green onions, chopped

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken, soy sauce, oyster sauce (if using), and cornstarch. Toss to coat and let marinate for about 10-15 minutes to enhance flavor and tenderness.

    Prep the Veggies: While the chicken is marinating, wash and cut the bell pepper, broccoli, and carrot. Chop the green onions and mince the garlic. Grate the ginger and set aside.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken in a single layer (you may need to do this in batches). Cook for about 4-5 minutes, or until the chicken is golden brown and cooked through. Remove from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger; sauté for about 30 seconds until fragrant. Then, add the bell pepper, broccoli, and carrot. Stir-fry for 3-5 minutes, or until the veggies are tender-crisp.

          Combine and Finish: Return the cooked chicken to the skillet with the vegetables. Add the sesame oil and stir to combine everything. Cook for an additional minute to heat through, and season with salt and pepper to taste.

            Serve: Remove from heat and serve the chicken stir-fry over cooked rice or noodles, topped with chopped green onions for garnish.
