1 lb (450g) large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, juiced and zested

1/4 cup chicken broth or white wine

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked rice or quinoa (for serving, optional)

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water, pat them dry thoroughly with a paper towel, and sprinkle with salt and pepper. Set aside.

    Cook the Asparagus: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are bright green and tender-crisp. Remove the asparagus from the skillet and set aside.

      Sauté the Garlic: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 30 seconds, until fragrant, being careful not to let the garlic burn.

        Cook the Shrimp: Add the shrimp to the skillet, cooking for 2-3 minutes on one side until they turn pink. Flip the shrimp and add the lemon juice, lemon zest, and chicken broth (or white wine). Cook for an additional 2 minutes until the shrimp are fully cooked and the sauce has slightly thickened.

          Combine Ingredients: Return the asparagus to the skillet and gently toss everything together to coat the shrimp and asparagus in the garlic butter sauce. Cook for another minute to heat everything through. Adjust seasoning with more salt, pepper, or lemon juice as desired.

            Serve: Remove from heat, garnish with fresh parsley, and serve immediately. This dish pairs wonderfully over cooked rice or quinoa, if desired.
