Ingredients

2 cups cooked jasmine rice (preferably chilled)

4 cloves garlic, minced

2 tablespoons vegetable oil

1 tablespoon soy sauce

1 teaspoon sesame oil

1/2 cup green onions, chopped

1/2 cup frozen peas and carrots mix

2 eggs, beaten

Salt and pepper to taste

Optional: 1 teaspoon chili flakes for a kick

Instructions

Prep the Ingredients: Ensure that the cooked rice is cold to avoid clumping. Chop the green onions and have the frozen peas and carrots ready.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Sauté Garlic: Add the minced garlic to the pan, sautéing for about 30 seconds until fragrant, but be careful not to burn it.

Add Vegetables: Toss in the frozen peas and carrots, stir-frying for another 2-3 minutes until heated through and tender.

Add Rice: Increase the heat to high, then add the chilled jasmine rice. Break up any clumps with a spatula and stir-fry for about 4-5 minutes, allowing the rice to get slightly crispy.

Flavor It Up: Pour in the soy sauce and sesame oil. Toss everything together until the rice is evenly coated in the sauces.

Scramble the Eggs: Push the rice to one side of the pan. Pour the beaten eggs into the empty side and scramble them until fully cooked. Mix them in with the rice once done.

Final Touch: Add the chopped green onions, salt, pepper, and optional chili flakes. Stir well to incorporate all flavors, and taste to adjust seasoning as necessary.

Serve and Enjoy: Plate your zesty garlic fried rice hot, garnished with additional green onions if desired. Enjoy your delicious and quick meal!
