Quick Garlic Shrimp Fried Rice

1 cup jasmine rice (cooked and cooled)

200g shrimp (peeled and deveined)

3 tablespoons vegetable oil (divided)

4 cloves garlic (minced)

1 small onion (finely chopped)

1 cup frozen peas and carrots (thawed)

2 eggs (lightly beaten)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and black pepper (to taste)

2 green onions (sliced, for garnish)

Prepare the Rice: If you haven't done so, cook the jasmine rice according to package instructions. Once cooked, spread it out on a baking sheet or large plate to cool and prevent clumping.

    Cook the Shrimp: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp and sauté for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.

      Sauté Garlic and Onion: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and chopped onion, cooking until the onion becomes translucent and the garlic is fragrant, about 1-2 minutes.

        Add Veggies: Stir in the thawed peas and carrots, cooking for an additional 2-3 minutes until they are warmed through.

          Scramble the Eggs: Push the vegetable mixture to one side of the skillet and pour the beaten eggs into the empty side. Stir gently to scramble until they just set, then combine them with the vegetables.

            Combine Everything: Return the cooked shrimp to the skillet, and add the cooled rice. Pour the soy sauce, oyster sauce (if using), and sesame oil over the mixture. Stir-fry everything together for about 3-5 minutes, breaking up any rice clumps and allowing the flavors to meld. Season with salt and black pepper to taste.
