Quick Garlic Shrimp & Spinach Linguine

8 oz linguine pasta

1 lb large shrimp (peeled and deveined)

4 cloves garlic (minced)

3 cups fresh spinach

1/4 cup cherry tomatoes (halved)

1/4 cup olive oil

1 tsp red pepper flakes (optional)

1 lemon (juiced and zested)

Salt and pepper to taste

Fresh parsley (chopped for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 9-10 minutes. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant. Add the shrimp to the skillet and season with salt and pepper. Cook for about 2-3 minutes per side, or until shrimp turns pink and opaque. Remove the shrimp from the pan and set aside.

      Cook Spinach and Tomatoes: In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes, then add the fresh spinach. Sauté until the spinach wilts down, about 2 minutes.

        Combine Everything: Add the cooked linguine to the skillet with the spinach and tomatoes. Return the shrimp to the pan. Pour in the lemon juice and zest, mixing everything well. If the mixture seems dry, gradually add in some reserved pasta water until you reach your desired consistency.

          Finish and Serve: Taste for seasoning and adjust with more salt, pepper, or lemon juice if needed. Serve hot, garnished with chopped parsley and grated Parmesan cheese.
