Quick Lemon Garlic Shrimp and Quinoa Bowl

Ingredients
  

1 cup quinoa, rinsed and drained

1 ¾ cups vegetable or chicken broth (or water)

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

2 cups spinach, roughly chopped

1 avocado, sliced

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and broth (or water). Bring to a boil over medium-high heat, then reduce to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Shrimp: While the quinoa cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Sauté the Shrimp: Add the shrimp to the skillet. Season with lemon zest, red pepper flakes, salt, and pepper. Cook for 2-3 minutes on one side until pink, then flip and cook for another 1-2 minutes or until they are fully cooked through and opaque.

        Finalize the Mixture: Once the shrimp are cooked, pour in the lemon juice and toss to combine. Add the cherry tomatoes and spinach, cooking for an additional 1-2 minutes until the spinach is wilted and the tomatoes are slightly softened.
