1 pound fresh okra, washed and trimmed

1 cup distilled white vinegar

1 cup water

2 tablespoons kosher salt

1 tablespoon granulated sugar

1 teaspoon mustard seeds

1 teaspoon coriander seeds

1 teaspoon red pepper flakes (adjust to taste)

3-4 cloves garlic, peeled and smashed

1-2 small dried red chilies (optional, for extra heat)

Fresh dill sprigs (for flavor, optional)

Prepare the Pickling Brine: In a medium saucepan over medium-high heat, combine the distilled white vinegar, water, kosher salt, and sugar. Stir until the salt and sugar dissolve completely. Bring the mixture to a boil, then remove it from heat and let it cool slightly.

    Pack the Okra: While the brine is cooling, pack the fresh okra into clean glass jars, standing them upright. Make sure to leave about 1 inch of space at the top of the jars.

      Add Spices and Flavorings: Distribute the mustard seeds, coriander seeds, red pepper flakes, smashed garlic cloves, and dried red chilies evenly among the jars. If you're using fresh dill sprigs for added flavor, place a few sprigs in each jar as well.

        Pour in the Brine: Carefully pour the warm pickling brine over the okra in the jars, ensuring they are completely submerged. Leave about half an inch of headspace at the top.

          Seal the Jars: Wipe the rims of the jars to remove any residue, then seal them tightly with the lids. Allow the jars to cool to room temperature before refrigerating.

            Pickling Time: For optimal flavor, let the pickled okra sit in the refrigerator for at least 24 hours before consuming. However, they can be enjoyed as soon as they are chilled.
