Ingredients

1 cup jasmine rice (cooked and cooled)

200g shrimp, peeled and deveined

1 cup frozen peas and carrots mix

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

2 teaspoons sesame oil

2 garlic cloves, minced

1 small onion, finely chopped

2 green onions, sliced

2 large eggs, lightly beaten

Salt and pepper to taste

Cooking oil (vegetable or canola)

Instructions

Prepare the Ingredients: Make sure your cooked rice is cooled and separated to prevent clumping. Have all your ingredients ready to go, as the cooking process will be quick.

Heat the Pan: In a large skillet or wok, heat 1 tablespoon of cooking oil over medium-high heat.

Sauté Aromatics: Add the chopped onion and minced garlic to the pan. Sauté for 1-2 minutes until they become fragrant and the onion is translucent.

Cook the Shrimp: Add the shrimp to the skillet. Season lightly with salt and pepper. Stir-fry for about 2-3 minutes, until the shrimp turn pink and are cooked through. Remove the shrimp from the pan and set aside.

Scramble the Eggs: In the same pan, add a little more oil if needed, then pour in the beaten eggs. Stir constantly for about 1-2 minutes until fully cooked. Remove the scrambled eggs and set aside with the shrimp.

Stir-Fry the Veggies: Increase the heat to high and add another tablespoon of oil. Toss in the frozen peas and carrots and stir-fry for about 2-3 minutes until heated through.

Combine Ingredients: Add the cooled rice to the skillet along with the shrimp and scrambled eggs. Pour in the soy sauce and oyster sauce (if using). Stir everything together to ensure all the ingredients are evenly coated with the sauce. Cook for an additional 2-3 minutes to let the flavors meld.

Finish with Green Onions: Drizzle with sesame oil and give it one final stir. Toss in the sliced green onions and mix well. Adjust seasoning with more salt and pepper if desired.

Serve Immediately: Plate the Shrimp Fiesta Fried Rice hot and enjoy!
