Ingredients

1 lb (450g) shrimp, peeled and deveined

1 tbsp olive oil

1 tsp paprika

1 tsp cumin

½ tsp garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

½ cup diced tomatoes

¼ cup fresh cilantro, chopped

1 lime, cut into wedges

For the Creamy Avocado Sauce:

1 ripe avocado

½ cup Greek yogurt or sour cream

1 tbsp lime juice

1 small garlic clove, minced

Salt to taste

Instructions

Prepare the Creamy Avocado Sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning if necessary and set aside.

Season the Shrimp: In a mixing bowl, combine the shrimp, olive oil, paprika, cumin, garlic powder, salt, and pepper. Toss until the shrimp are evenly coated with the seasonings.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook them.

Warm the Tortillas: While the shrimp is cooking, warm the tortillas in a separate dry skillet over medium heat for about 30 seconds on each side, or until they are pliable.

Assemble the Tacos: Place a small amount of shredded cabbage on each tortilla, followed by a generous helping of the cooked shrimp, diced tomatoes, and fresh cilantro.

Top with Sauce: Drizzle the creamy avocado sauce over the filling. If desired, add extra lime juice for a zesty punch.

Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top.
