Quick Turkey and Spinach Stuffed Shells

12 jumbo pasta shells

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 jar (24 oz) marinara sauce

1 tsp Italian seasoning

1/2 tsp garlic powder

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to prevent sticking. Set aside.

    Prepare the Filling: In a large skillet, over medium heat, add the ground turkey. Cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes. Season with salt, pepper, Italian seasoning, and garlic powder.

      Add Spinach and Cheese: Once the turkey is cooked through, stir in the chopped spinach and cook for an additional 2-3 minutes, until the spinach wilts. Remove from heat and let it cool slightly. In a mixing bowl, combine the turkey-spinach mixture with ricotta cheese, 1/2 cup of mozzarella cheese, and grated Parmesan. Mix until well combined.

        Fill the Shells: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce at the bottom of a 9x13 inch baking dish. Take each cooked pasta shell and carefully fill it with the turkey and cheese mixture. Place the stuffed shells seam-side up in the baking dish.

          Top with Sauce and Cheese: Pour the remaining marinara sauce evenly over the stuffed shells. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.

              Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve hot and enjoy your delicious Quick Turkey and Spinach Stuffed Shells!
