4 large whole wheat tortillas

1 cup cooked quinoa

1 cup canned black beans, rinsed and drained

1 cup diced bell peppers (red, yellow, or green)

1 cup shredded carrots

1 cup corn (canned or frozen)

1 avocado, sliced

1 cup spinach leaves

½ cup shredded cheese (cheddar or mozzarella)

1/4 cup Greek yogurt or sour cream

2 tablespoons salsa

1 tablespoon lime juice

1 teaspoon cumin

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the cooked quinoa, black beans, diced bell peppers, shredded carrots, corn, lime juice, cumin, salt, and pepper. Mix until well combined. Adjust seasoning as needed.

    Assemble the Wraps: Lay a tortilla flat on a clean surface. Spread a tablespoon of Greek yogurt or sour cream in the center of the tortilla. Top it with a generous scoop of the veggie mixture, a few slices of avocado, a handful of spinach leaves, and a sprinkle of cheese.

      Wrap it Up: Fold in the sides of the tortilla and then roll up from the bottom to securely encompass the filling. Make sure it’s tightly wrapped to keep the contents from falling out.

        Optional Toasting: Place the wrapped tortilla seam-side down in a skillet over medium heat and toast for 2-3 minutes on each side until golden brown and crispy, if desired. This step adds a lovely texture and warmth to the wrap.
