Ingredients

4 large egg whites

1 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon cream of tartar

Food coloring (pink, blue, purple, and yellow)

Cotton candy (to garnish)

Instructions

Preheat the Oven: Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper.

Prepare the Meringue Base: In a clean, dry mixing bowl, combine the egg whites and cream of tartar. Using an electric mixer, beat the egg whites on low speed until frothy (about 1 minute).

Add Sugar Gradually: Increase the mixer speed to medium and gradually add the granulated sugar (1 tablespoon at a time). Continue to beat the egg whites until stiff peaks form and the mixture is glossy (approx. 7-10 minutes).

Flavor It Up: Add the vanilla extract and mix gently until just combined.

Divide and Color: Divide the meringue mixture into four separate bowls. Add a few drops of food coloring to each bowl, one color per bowl. Gently fold the color into the meringue, being careful not to deflate it too much. Aim for a marbled effect rather than fully blending the colors.

Pipe the Meringues: Transfer each colored meringue mixture into separate piping bags. Starting at one corner of your prepared baking sheet, pipe small mounds (about 1-2 inches wide). Alternate the colors as you pipe, allowing them to swirl together slightly.

Bake the Meringues: Place the baking sheets in the preheated oven and bake for 1 hour. Once baked, turn off the oven and leave the meringues in there for an additional hour to dry out completely.

Cool Down: Remove the meringues from the oven and let them cool on the baking sheets for about 10 minutes before transferring to a wire rack.

Garnish and Serve: Once cooled, top each meringue with a small tuft of cotton candy for that delightful, whimsical touch. Serve and enjoy your stunning Rainbow Cotton Candy Meringues!
