1/2 cup unsalted butter (1 stick)

8 oz bittersweet chocolate, chopped

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon salt

1 cup fresh raspberries

Additional powdered sugar for dusting

Vanilla ice cream (optional, for serving)

Instructions
 

Preheat your oven to 425°F (220°C). Grease 4 ramekins with butter and dust with flour, tapping out any excess.

    In a medium saucepan, melt the butter and chopped chocolate over low heat, stirring until smooth and combined. Remove from heat and let cool slightly.

      Whisk in the powdered sugar until fully incorporated and there are no lumps.

        Add in the eggs and egg yolks, mixing well, followed by the vanilla extract.

          Gently fold in the all-purpose flour and salt until just combined, being careful not to overmix.

            Distribute about half of the batter evenly among the prepared ramekins. Place 2-3 fresh raspberries in the center of each, then top with the remaining batter, covering the raspberries completely.

              Place the filled ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm but the center should still be soft.

                Remove from the oven and let the cakes sit for 1 minute before carefully inverting each ramekin onto a plate. Gently lift off the ramekins to reveal the delicious lava cakes.

                  Dust with additional powdered sugar and serve immediately, preferably with a scoop of vanilla ice cream and a few more fresh raspberries on the side.
