Ingredients

For the Oat Layer and Crumble:

1 ½ cups rolled oats

1 cup all-purpose flour

½ cup brown sugar, packed

½ teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, melted

¼ cup honey or maple syrup (for a vegan option)

For the Raspberry Filling:

2 cups fresh or frozen raspberries

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C). Line an 8x8 inch square baking pan with parchment paper, leaving some overhang for easy removal later.

Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix well to ensure all dry ingredients are evenly distributed.

Incorporate Wet Ingredients: Pour the melted butter and honey (or maple syrup) into the dry mixture. Stir until crumbly and the mixture holds together when pressed. Reserve about 1 cup of this mixture for the crumble topping.

Press the Base Layer: Transfer the remaining oat mixture into the prepared baking pan. Press it down evenly to form a compact base layer.

Make the Raspberry Filling: In another bowl, combine the raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the raspberries are well coated.

Assemble the Bars: Spread the raspberry filling evenly over the pressed oat base. Then, sprinkle the reserved crumble on top of the raspberry layer, ensuring it's evenly distributed.

Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.

Cool and Serve: Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment overhang to lift the bars out of the pan. Cut into squares and serve. Enjoy your sweet and tangy raspberry oatmeal crumble bars!
